Creamy Jalepeno Chicken Bowl

Recipe for 4 serves: (Helloooo meal prep!)
The bowl 🥣
800g squash
1 tsp cooking oil (ghee/avocado/olive etc for cooking chicken)
640g chicken breast
2tsp garlic powder
2tsp onion powder
1tsp cumin
salt+pepper
4 cups romaine
120 corn (canned/drained)
The sauce 🍋🟩
170g non fat greek yogurt
75g low fat cottage cheese
1 medium jalepeno pepper (remove seeds if you aren’t into heat, keep some if you can handle it😏)
juice from 1 medium lime
good handful of fresh cilantro/coriander
salt + pepper to taste
splash of water to thin (optional)
1.Toss squash with salt (optional quick spray avo/olive oil)
Roast at 425°F (220°C) for 25–30 min until tender and caramelized.
2.Season chicken with garlic powder, onion powder, cumin, salt + pepper.
Pan-cook, bake, or air-fry until cooked through. Rest, then chop.
3.Blend your sauce ingredients + set aside in the fridge.
4.Build the bowls- Add romaine, roasted squash, chicken, corn, and drizzle with sauce.
Finish with cilantro + lime <3
