Three Cheese IPA Soup

Ingredientes

2 tbsp unsalted butter

2 garlic cloves, grated

12oz IPA

1 tbsp cornstarch

1 tbsp water

8oz sharp Cheddar, shredded

2oz Monterey Jack, shredded

2oz soft goat cheese, crumbled

1/2 tsp Worcestershire sauce

1/4 tsp ground black pepper

Finely chopped celery with leaves, for garnish

Instrucciones

Melt the butter in a medium soup pot over medium-high heat. Add the garlic and cook until you begin to smell it, about 1 minute. Reduce the heat to medium and carefuly add the beer.

Stir together the cornstarch and water in a small bowl. Whisk the slurry into the beer. Continue to whisk for 30 seconds to 1 minute. It will thicken slightly. Whisk in the Cheddar and Monterey Jack until melted. Whisk in the goat cheese until smooth.

Remove the soup from the heat and stir in the Worcestershire sauce and pepper. Ladle into bowls and garnish with chopped celery.
