Adding Street Corn Taco Bowls to the Regular Rotation

STREET CORN TACO BOWLS
For the sweet potatoes:
3-4 cubed sweet potatoes
Drizzle of olive oil
Sprinkle of salt, pepper, garlic powder & smoked paprika (I eyeball these!)
For the taco meat:
1 lb lean ground beef (I use 96/4)
1 small yellow onion, chopped
1 packet taco seasoning (I like Frontera or Simply Organic)
For the street corn:
1 package frozen fire roasted corn (I’ve found at TJs or Whole Foods)
2 tbsp or 1 large spoonful plain greek yogurt
1 tbsp mayo
1 small jalapeño, finely chopped
Dash of smoked paprika
A few spoonfuls of cotija or parmesan cheese
Instrucciones
Preheat oven to 400F. Add cubed sweet potatoes to a sheet pan; drizzle with olive oil and add seasonings. Stir until all pieces are coated. Bake for ~30 minutes or until potatoes are cooked through and slightly crispy.
While potatoes are cooking, prepare meat and street corn. Add onion to a pan over medium heat and cook for ~2 minutes or until slightly softened. Add meat; once meat is cooked sprinkle in taco seasoning.
Heat corn according to package instructions (I use the microwave). Then mix in all other ingredients until everything is well combined.
Once all components are done, assemble taco bowls. Top with lime juice, cilantro, more cheese, etc & enjoy!
