One Pan Yellow Curry Noodles in 20 Minutes

Ingredientes

yellow curry

400ml coconut milk

2 1/2 tbsp yellow curry paste

1 tbsp soy sauce

1 tbsp fish sauce

1 tbsp maple syrup

Juice 1/2 a lime

2 tsp minced ginger

1 tsp minced garlic

1 cup vegetable stock

180g dried egg noodles

350g firm tofu, cut into cubes

1 carrot, peeled and sliced

2 cups broccoli, chopped

2 tbsp chives, finely chopped

1 red chilli, finely chopped (optional)

Instrucciones

Preheat oven to 200C. Put all yellow curry ingredients into a large baking dish and whisk until combined. Add the noodles into the centre of the dish and submerge in the coconut milk mixture. Arrange the tofu, carrot and broccoli around the noodles. Place in oven and baked for around 15-20 mins or until cooked. Using tongs, combined noodles with all ingredients. Top with chilli and chives.
