Yellow Curry

Ingredientes

1 Tbsp avocado oil

1/2 large onion or 1 small, thinly sliced

1 large or 2 small chicken breast thinly sliced

1/4 C yellow curry paste

Golden potatoes, carrots (similar amount as chicken combined), cut into bite size pieces

Approx 14 oz coconut milk in carton

1/2 C chicken stock

2 tsp tamarind

Pinch salt

2 tsp fish sauce

Toppings: Fresh Thai basil or cilantro, fried onion

Instrucciones

Heat oil, sauté onions until soft

Add paste and chicken, sauté 3-5 min

Add coconut milk, broth, tamarind and salt

Add potatoes & carrots

Simmer 30 min until chicken and vegetables are cooked through

Add more broth if needed

Add fish sauce, serve over rice with toppings
