Red Braised Aubergine/ Eggplant

Aubergine 🍆 2
Cornstarch 3 tbsp
Garlic 3 cloves
Soy Sauce 5 tbsp
Dark Soy sauce 1 tbsp
Vegan oyster sauce 1 tbsp
Water 30ml
Sugar 1 tsp
Scallion 1 Stalk

Recipe
1.Cut the garlic and scallion into pieces. Peel and cut the aubergine into chunks(about 2cm wide), coat the aubergine with cornstarch. In a bowl, add soy sauce, dark soy sauce, vegan oyster sauce, water and sugar, mix everything
2.Heat up the wok over high heat, add oil(more oil than a normal stir-fry), when the oil is hot, add aubergine, pan fry for a few minutes until the aubergine is slightly brown on the outside and cooked, take it out
3.Add garlic, stir for 30s, add aubergine and the sauce from step 1, let it cook over medium heat until most of the sauce is gone, add scallion
