Ingredientes

1 tablespoon vegetable oil

3 pound chuck roast

2 teaspoon kosher salt

2 teaspoon ground black pepper

½ teaspoon garlic powder

1 yellow onion (thinly sliced)

½ cup sweet red table wine

½ cup soy sauce

4 cup unsalted beef stock

1 bay leaf

2 French bread

1 butter (salted)

16 - provolone cheese

Instrucciones

Step 1 • Season the chuck roast with salt, pepper, and garlic powder, rubbing the spices in evenly.

Step 2 • Tuin on the Instant Pot to 'Sauté' and set to 'More' • Heat the vegetable oil until hot, then sear the roast on both sides for 5-10 minutes until browned.

Step 3 • Remove the roast and set aside. Add the sliced onion to the pot and sauté until golden brown, about 10-12 minutes.

Step 4 • Add the red wine to the onions, deglazing the pot, and reduce the wine by half, about 2-3 minutes.

Step 5 • Add the soy sauce and beef stock, then return the roast to the pot along with the bay leaf. Cancel the 'Sauté' function.

Step 6 • Close the Instant Pot, set to 'Manual' or 'Pressure Cook' on 'High Pressure' for 100 minutes.

Step 7 • After cooking, allow for a 25-minute natural pressure release. Release any remaining pressure and open the pot.

Step 8 Shred the roast and serve with the au jus in a ramekin for dipping.

Step 9 • For the sandwiches, toast the buttered French bread, add provolone cheese, and load with shredded roast before serving.
