This is the perfect cocktail for those of you who want a FUN holiday drink for your guests this year, but don’t have 3 days to fat wash and do all of that. This recipe takes about 2 hours from start to finish but only like 20 mins of actively doing something, the rest is just waiting. You’re not lazy, you just want EASE.

While this is the perfect drink for any level, if you want something more complex I also have the more “intermediate” take on this clarified drink also on my page as the clarified thai tea!!

Instrucciones

1 cup strong brewed tea (jasmine, oolong, assam work best)

1/3 c brown sugar

1/3 c gold rum

1/3 c lemon juice

Pincha’ salt

Lemon peels

1/2 c whole milk

Tapioca pearls + brown sugar

Dissolve brown sugar into brewed tea. Mix together in a bowl the rum, lemon juice, and a pinch of salt. In another larger bowl, add your whole milk. Pour your “rum/tea” mixture bowl into the milk slowly. Stir with a spoon and add in your lemon peels.

Let sit for 45 mins at room temp to curdle up.

Pour curdled mixture through 2 layered coffee filters. The first stream that is filtered out will be cloudy. Pour that back into the filter on top. Do NOT throw out the filtered curds! Keep pouring the clarified drink through the same fiilter until it runs completely clear. Super batch friendly and can keep in your fridge for weeks.

Recipe is diluted enough from the tea so no need to stir down. Serve over ice with brown sugar boba pearls or an orange twist.
