Lemon Loaf

3 eggs
1 cup sugar
1/4 cup sour cream
1 lemon, zested and juiced
1/4 cup olive oil
2 tablespoons milk
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
2 cups almond flour
1/3 cup coconut flour
2 teaspoon baking powder
LEMON GLAZE
1 cup powdered sugar
2 tablespoons lemon juice
Instrucciones
Preheat oven to 350 degrees.
In a large mixing bowl, beat together eggs and sugar until smooth. Add the zest and juice from one lemon, sour cream, olive oil, milk and vanilla extract. Mix well.
In a separate bowl, combine almond flour, coconut flour, baking powder and salt.
Mix both mixtures just until they are combined, being careful not to over mix!
Add batter to a parchment lined or well greased loaf tin. Bake for 1 hour or until a tooth pick comes out of the center clean.
To make the icing, combine lemon juice and powdered sugar until you have a nice, thick glaze! If it gets too thick, feel free to add a splash of milk to thin it out again. If it’s too thin, add more powdered sugar. It’s really impossible to mess this up!
Let the loaf cool then top with the glaze. Enjoy on your brunch table with a cup of coffee!
