Big Kahuna Burgers from Pulp Fiction

2 tbsp unsalted butter
1 red onion, sliced into rings
Two 1/2-inch fresh pineapple slices, cored
1 tbsp vegetable oil
4oz ground beef, divided into two balls
2 slices Monterey Jack cheese
1 Hawaiian-style hambuger bun, toasted and buttered
1/2 tsp ketchup
1 1/2 tsp teriyaki sauce
Instrucciones
In a large skillet, heat 1 tbsp butter over medium heat until foaming. Add the onion and cook slowly over low heat, stirring often, until the onion is caramelized, 30 minutes. Transfer the onion to a bowl and set aside.
Wipe out the skillet and heat the remaining tbsp of butter over medium heat until sizzling. Add the pineapple slices and cook, turning once, until lightly browned on both sides. Transfer the pineapple to a plate and set aside.
In a large cast-iron skillet, heat the oil over high heat until just beginning to smoke. Place the beef balls several inches apart in the skillet, then use a spatula to smash them down into thin patties. Cook until the bottom is well browned and crisp, 1-2 minutes, then flip and top with a slice of cheese. Turn off the heat, but leave the patties in the pan while you assemble the burgers (the residual heat will brown the other side).
Dress the bottom half of the bun with ketchup and teriyaki sauce and top with the patties, pineapple, and caramelized onion. top with the other half of the bun and serve.
