Sweetgreen Elote Bowl

Ingredientes

Cilantro lime dressing

1/3 cup olive oil

1 cup cilantro, chopped and packed

3 tb apple cider vinegar

2 tb maple syrup

2 limes, juiced

1 small jalapeño pepper, seed removed and chopped

3 cloves garlic

1/2 tsp black pepper

1/2 tsp kosher salt

Salad

1 1/2 cups frozen corn

2 red bell peppers, seeded and finely diced

1 tsp cumin

1 tsp olive oil

2 cups cooked quinoa

4 cups arugula

1 1/2 cups finely shredded purple cabbage

1 cup baby tomatoes, halved

1/4 cup sunflower seeds

1/3 cup cotija cheese (or sub goat cheese like the OG version)

3/4 cup crushed tortilla chips

First, prepare the dressing. Add all of the ingredients to a small blender and blend until smooth. Taste and adjust seasonings to taste. Next, cook your quinoa and set aside. Heat a skillet over medium heat. Add olive oil. Once the pan is hot, add the corn, bell pepper, cumin and a pinch of salt. Stir and mix for 6-7 minutes until the corn is cooked through and the peppers have softened. Remove from heat. Assemble your bowls, with the arugula on the bottom, then quinoa, cabbage, tomatoes, sunflower seeds, the corn mixture, cheese and tortilla chips. Pour dressing on top, toss and enjoy!
