Crispy Harissa Tofu with Asparagus Orzo

Ingredientes

For the tofu:

Half a block of firm tofu

2 tbsp harissa paste

Oil

Salt and pepper

For the orzo:

2 spring onions

3 cloves garlic

2 handfuls cavalenero

2 handfuls spinach

2 tbsp mint sauce

3 tbsp yoghurt

Juice of half a lemon

1 cup frozen peas

1 tsp sweet paprika

1 & 1/2 cups orzo

Instrucciones

Start by tossing your cubed tofu in oil, salt and pepper. Heat up a skillet to a medium/high heat and fry off your tofu until crispy and charred (around 6 mins).

Once crispy, add in the harissa paste and cook for another minute or two and stir to coat then set the tofu aside.

Now cook your orzo to packet instructions keeping some of the pasta water at the end.

In another pan, add some oil over a medium heat, drop in your spring onions and asparagus, cook for 2-3 mins and then go in with the cavalenero, spinach and garlic and cook for another few minutes constantly stirring until everything wilts down. Add in the mint sauce and stir to combine.

Once your orzo is cooked, toss it with the yoghurt, 2 tbsp pasta water, lemon juice, paprika and peas. Keep stirring until it thickens then turn off the heat.

Plate up your orzo, top with all the greens and then the crispy harissa tofu and finish with an extra glug of olive oil and salt and pepper and enjoy!!
