32 fl oz chicken broth (1 carton)
2lb chicken breast raw
4 medium carrots
4 celery stalks
1 yellow onion
1 oz heavy cream
2 tbsp butter
14g olive oil
2 tsp poultry seasoning
1 tsp salt
DUMPLINGS
200g AP flour
1 tsp salt
1 tsp sugar
4 tbsp salted butter
4 fl oz heavy cream
Instrucciones
prep dumplings
combine dry ingredients in a bowl
chop butter into small pieces
combine with gloved hands
stir in cream
knead (fold) 2 min, form into ball
allow to rest in covered bowl
prep vegetables (trim, peel, wash)
dice into very small pieces
clean chicken and slice thinly
weigh & season
(1 tsp poultry seasoning & salt (light))
heat olive oil in large, deep pan
cook chicken 5 min both sides
remove chicken and let cool
melt butter
add carrots, celery, and onion
add salt (light) and poultry seasoning
cook 5 min, covered
add broth
increase to gentle simmer
shred chicken into pot by hand
add heavy cream
roll out dough and slice to desired size (pizza cutter)
drop in soup, avoiding stacking on each other
simmer for 15 min, covered (don’t stir)
