Ingredientes

This recipe is not only delicious, but it’s super healthy. Beans are one of the foods commonly associated with the traditional diets of the Blue Zones, areas around the world known for exceptional longevity. They’re packed with fiber, plant-based protein, vitamins and minerals—and they’re inexpensive, too.

This is simple, rustic Italian cooking at its best. ❤️

You’ll need-

2 cans (15 oz each) cannellini beans, drained and rinsed

2 cups ripe tomatoes, chopped

3–4 cloves garlic, thinly sliced

¼ cup extra virgin olive oil, plus more for finishing

10–12 fresh basil leaves, chopped

½ tsp salt

½ tsp freshly cracked black pepper

Pinch of red pepper flakes, optional

1/3 cup of water or chicken broth

Crusty Italian bread, toasted

Instrucciones

1-Heat the olive oil in a large skillet over medium-low heat. Add garlic and gently cook for 1–2 minutes—don’t let it brown.

2-Add tomatoes, salt, pepper and red pepper flakes. Cook 5–7 minutes until the tomatoes soften and release their juices.

3-Add the cannellini beans, water or broth and gently stir. Cook another 5-8 minutes so the beans soak up all those beautiful flavors.

4-Turn off the heat and stir in the fresh basil.

Spoon onto a plate, drizzle with good extra virgin olive oil and serve with thick slices of toasted crusty bread.

Simple food always wins especially when it’s a healthy option.
