N’duja Bucatini

Ingredients (serves 2):

250g bucatini (or spaghetti)

1tbsp EV olive oil

2tsp minced garlic

1 ½ tomato paste

120g n’duja (I used @belazu_co vegan version)

50g crème fraîche

Pasta water reserve

50g grated grana padano cheese (or parmesan)

salt & black pepper

topping: chopped parsley & a little extra cheese

Boil the pasta in salted water until al dente (per pack instructions)

While the pasta cooks, heat EV olive oil in a pan & fry the garlic, tomato paste & n’duja until fragrant

Add crème fraîche & 1/2cup of pasta water and stir into a silky sauce

Add the grated grana padano & salt/ pepper to taste. Stir together

Add the bucatini (straight from the pot) & toss to coat in the sauce

Plate up & top with chopped parsley and more grana padano cheese
