Gochujang Chicken Fried Rice

INGREDIENTS (Serves 2):
260g chicken, finely sliced
1 red onion, diced
1 bell pepper
1 carrot
2 spring onion
Garlic
Basmati rice (dry weight)
30g gochujang paste
2 tbsp soy sauce
1 tsp honey
Some lemon or lime juice
Salt
Black Pepper
Ginger
Option - fried egg
METHOD:
1.Put the rice on to boil, as per packet instructions. Once done, drain any excess water and leave in a pot (off of the heat) with a lid on. 2.Season the chicken with some salt and black pepper then fry in a large pan until browned. 3.Add in the onion, peppers and garlic. Fry until browned. The chicken should be cooked through at this point. 4.In a small bowl, mix the gochujang paste, soy sauce, sesame oil and lime or lemon juice then add the sauce to the pan along with the cooked rice. Mix everything together until combined.
5.Add in the spring onion, then serve between 4.
