Onion and Goat Cheese Pizza

4 onions

1 Tbls Oil

1/2 tsp salt

Crumbled Goat Cheese

1 cup Balsamic Vinegar

Balsamic Drizzle

Simmer in pan for 30mins to reduce.

If it gets too thick while sitting around - zap in microwave.

Caramalized Onion Sauce

Heat oil in skillet

Add thinly sliced onions to pan

Heat over high for 2 mins, stirring

Sprinkle on salt

Reduce heat to medium and cook, stirring occasionally for 10 mins

Turn heat to low and cook for 30 to 45 mins

Onions should disintegrate and become a fluffy sauce.

Pizzetta

Spread onion sauce on pizzeria

Sprinkle with goat cheese, and bake

Top with swirls of balsamic drizzle

Add fried sage if you have any - or sprinkle arugula over.
