Let’s bring my most viral video, the maroulosalata. This lettuce salad is truly deceiving in how tasty it is and compliments any table it plonks itself onto. Last time I got reamed for using iceberg so today we have don’t it super traditionally with romaine cos lettuce. Perfect to go with your easter lamb (coming tomorrow).
1 cos/romaine lettuce (thinly sliced)
1 bunch spring onion (thinly sliced)
250gm @dodoni.au feta (crumbled)
1 bunch dill (finely chopped)
3 tbl sp dried oregano
3 garlic cloves (minced)
1 lemon (zest & juice)
1 tbl sp white vinegar
4 tbl sp EVOO
3 tea sp sea salt
1 Begin by making dressing. Place garlic, lemon zest, lemon juice, white vinegar, EVOO and sea salt in a jar and shake hard.
2 In large salad bowl add you lettuce, spring onion, dill, feta and oregano. Pour your dressing over the top and bring together with tongs, mix for at least a minute to help the lettuce wilt to the dressing and spread the feta.
