CHORIZO BAKED BEANS WITH SPINACH AND GRILLED CHEESE.

100g chorizo, sliced or diced
1 onion, diced
1 red, orange or yellow capsicum, cored and diced, or 1 medium courgette, diced
1 teaspoon smoked paprika
1 tablespoon thyme leaves
1 x 400g can cannellini beans, rinsed and drained
1 x 400g can kidney beans, rinsed and drained
1 x 400g can crushed tomatoes (preferably with garlic and
2 tablespoons Worcestershire chilli)
sauce
1 tablespoon chipotle sauce
1 tablespoon tomato relish
or chutney
2 handfuls chopped spinach, silverbeet or baby spinach
75g crumbled feta or goat's cheese or ¼ cup grated cheese
Basil leaves, to garnish

1. Place chorizo in a medium fry-pan (use an ovenproof one Preheat oven to grill.
if you've got one) on medium heat - the chorizo will start heating up and sizzling. Cook for 1-2 minutes, then add onion and capsicum/courgette and continue cooking for
a few minutes until onion is soft.
2. Add paprika, thyme, beans, tomatoes, Worcestershire sauce, chipotle sauce, tomato relish/chutney and spinach/silverbeet. Stir and simmer for 5-8 minutes until thickened. Season to taste with salt and pepper.
3. If using an ovenproof fry-pan, sprinkle cheese over and place under grill for a few minutes until bubbly. Alternatively, transfer beans to an ovenproof dish and sprinkle cheese over the top before grilling. Serve hot, garnished with basil, with a poached egg on top
if you like.
