Dirty Martini Dip

Yields: 6–8 servings
Ingredients:
– 1 large onion, thinly sliced
– 2 shallots, thinly sliced
– 2 tbsp olive oil or butter
– 1 tbsp sugar (to help with caramelization)
– 1/4 cup vodka (to deglaze)
– 8 oz cream cheese, softened
– 1/2 cup sour cream
– 1/4 cup blue cheese crumbles
– 1/4 cup manzanilla olives, chopped
– 2 tbsp olive brine (from the olive jar)
– 1 tsp garlic powder
– 1/2 tsp salt (or to taste)
– 1/4 tsp black pepper (or to taste)

1. Heat the olive oil or butter in a skillet over medium heat.
2. Add the sliced onions and shallots and cook, stirring occasionally, until softened (about 5 minutes).
3. Add the sugar and cook, stirring frequently, until golden brown and caramelized (about 20 minutes).
4. Deglaze the pan with vodka, scraping up browned bits. Let cook for 1–2 minutes, then remove from heat.
5. In a large mixing bowl, combine softened cream cheese, olive brine, garlic powder, and sour cream. Stir until smooth.
6. Add chopped olives, blue cheese crumbles, salt, and pepper. Mix until well incorporated.
7. Once the caramelized onions and shallots have cooled slightly, add them to the dip mixture. Stir until evenly distributed.
8. Transfer dip to a serving dish and chill for at least 30 minutes to let flavors meld.
9. Serve with kettle cooked potato chips, or toasted bread
