Hoisin ‘duck’ Wrap

back with episode 3 of the series where I out loads of nice things in wraps & today is one of my all time faves- crispy hoisin ‘duck’ using oyster mushrooms !
this is hands down my fave way to cook oyster mushrooms, trust me you’ll understand when you make it x
ingredients (makes 2-3 wraps)
2-3 wraps/flatbreads
sriracha mayo
spinach, shredded
spring onion, thinly sliced
sesame seeds
for the ‘duck’
250g oyster mushrooms
4 tbsp cornstarch
1 tsp chinese five spice
1/2 tsp garlic granules
1/2 tsp onion granules
1/2 tsp salt
1/2 cup hoisin sauce
neutral oil for frying
for the pickle
1/2 a cucumber, sliced into matchsticks
1/4 cup white vinegar
1/4 cup water
1/2 tbsp sugar
1/4 tsp salt

add the cucumber, sugar, salt, vinegar & water to a dish, give it a good mix then set aside to pickle while you prepare everything else
tear your mushrooms into strips then add them to a bowl with the cornstarch, five spice, garlic granules, onion granules & salt then give everything a good mix to coat
fry in a generous amount of oil until golden & extra crispy then set aside on some kitchen towel to drain any excess oil
add to a bowl along with the hoisin sauce & toss to coat evenly
assemble your wraps with sriracha mayo, spinach, hoisin mushrooms, pickled cucumber, spring onion & sesame seeds
