This juicy chipotle chicken is PACKED with flavor and pairs perfectly with a creamy cucumber salad for a balanced, high-protein meal!! Plus, the leftovers make lunches you’ll actually look forward to all week long!!

All you need is:

chipotle peppers

lime

olive oil

honey

s + p

garlic powder

honey

fresh flat leaved parsley

chicken thighs

Cucumber salad:

½ cup plain greek yogurt

1 tablespoon white vinegar

1 tablespoon olive oil

1 teaspoon salt

¼ teaspoon black pepper

2 tablespoon fresh dill finely chopped

1 tablespoon honey

6 persian cucumbers thinly sliced (I like using a mandolin)

½ red onion thinly sliced

1 avocado diced
