Steamed Eggs

3 large eggs
1 1/2 cup warm water or chicken stock
1/4 teaspoon salt (optional)
Garnish:
1 teaspoon Soy sauce
1/2 teaspoon sesame oil
1 teaspoon chili garlic crisp (peep previous reel for my recipe)
2 stalk scallion, sliced thin
Whisk eggs with salt until smooth. Slowly mix in warm water (key for silky texture). Transfer to a heatproof bowl to remove bubbles with a spoon.
Steam over medium-low heat for 10-15 minutes (or until the center jiggles slightly when shaken). Turn off heat and let sit covered for 2 more minutes. Serve with soy sauce, sesame oil, chili garlic crisp and scallions. Devour!
