Fluffy Home-made Tofu Bao Buns

Bao buns:

1 ½ cups plain flour

2 tbsp sugar

1/2 tsp salt

1 + 1/2 tsp instant yeast

2 tsp vegetable oil

Tofu filling:

1/2 brown onion, diced

1/3 cup soy sauce (can sub tamari)

1 tbsp white miso paste

2 cloves of garlic, crushed

1 tsp dried ginger powder (can sub grated fresh ginger)

1 tbsp brown sugar (can sub maple syrup)

1 tbsp olive oil

300g firm tofu

Add all bao bun ingredients to a bowl. Use a spoon to roughly mix, then begin using your hands to mix. If the mixture is too dry to mix, add a splash of water. If too dry, as a dash of flour

Transfer the dough to a clean surface and knead for 10 minutes, until the dough is smooth and elastic. Transfer to a bowl, cover with a tea towel, and place in a warm spot for 1 hour

Prepare the filling ingredients. Add soy sauce, miso pasta, crushed garlic, ginger and brown sugar to a bowl and mix until well-combined. Place a frying pan over medium-high heat on the stove, drizzle with olive oil and add the diced onion

Fry the diced onion for 2-3 minutes, before using your hands to crumble in the tofu. Mix well, frying for 4-5 more minutes, before reducing the heat to low and add the sauce. Mix well, continue to fry for two more minutes, then remove from the heat and turn off the stove

Once the dough has risen for an hour, transfer to a clean surface and cut into 6-8 even pieces. Roll each piece into a ball with your hands, then use a rolling pin to flatten into a disc shape

Fill each piece with approximately 2 tbsp of the tofu filling. Then, use your hands to pick up the edges of the dough, wrap the tofu and pinch at the top. Repeat with all of the dough and filling

Place a large frying pan with high sides over medium-high heat on the stove. Drizzle with oil, then place the bao buns in the pan. Fry for 2-3 minutes, before reducing the heat to low. Leave on low for 5 minutes, then pour in enough water to cover the bottom of the bao buns by 2cm. Place a lid on the frying pan and leave to steam for 8-10 minutes, or until the bao buns are nice and fluffy

Remove the bao buns from the pan, serve hot and enjoy!
