Lamb Shanks

4 lamb shanks
1 red onion
1 Tbsp crushed garlic
200ml chicken stock
1 glass of red wine (please use whatever you have access to, I used an open red wine blend I had)
1 Tbsp tomato paste
200g baby carrots
Handful of fresh herbs - I used rosemary, thyme , sage and tarragon
1 can butter beans
250g cherry tomatoes
Salt
Pepper
A little brown sugar sprinkled for the acidity of the tomatoes
Oil for browning

Preheat oven to 180 degrees.
Season lamb shanks generously
Heat oil in pan, Brown in a pan , until brown on all sides
Remove lamb from the pan
In the same pan add onions and garlic , sauté until soft.
Add stock , red wine , tomato paste , chickpeas , carrots , herbs and combine.
Return shanks to the pan , and add cherry tomatoes .
Cover with foil
Roast in the oven for 2 hours …… remove from oven after 2 hours , remove foil and return to oven for a further 15-20 minutes
Enjoy shanks with mash , risotto, roast veg , or roasted potatoes .
If you have a pressure cooker , you can add all the ingredients to a pressure cooker and cook for 45-50 minutes on high pressure .
