5 tablespoons horseradish

1 tablespoon chipotle powder

2 tablespoons chipotle purée

3/4 c Mae ploy

3/4 cup Chile sauce

1 teaspoon cinnamon

1/4 cup lemon juice

1/2 cup rice, wine, and vinegar

Salt and pepper to taste
