Zucchini And Pork Sausage Penne

2 zucchini

2 onions

12 oz penne pasta

12 oz Italian pork sausage

3 oz tomato paste

2 oz mushroom stock concentrate

4 tbs cream cheese

2 tbs Italian seasoning

Bring a large pot of salted water to a boil. Wash and dry produce. Trim and halve zucchini lengthwise; finely dice into ¼-inch-thick pieces. Halve, peel, and finely chop onion.

Remove sausage from casing if necessary; discard casing.

Heat a drizzle of oil in a large pan over medium-high heat.

Add zucchini and onion; season with salt and pepper. Cook, stirring occasionally, until softened, 3 minutes. Add sausage, Italian Seasoning, and a pinch of chili flakes from your pantry if desired; cook, stirring occasionally, until veggies are browned and tender and sausage is cooked through, 4-5 minutes.

Once water is boiling, add pasta to pot. Cook until al dente, 9-11 minutes. Reserve ½ cup pasta cooking water (1 cup for 4 servings), then drain.

Add tomato paste to pan with sausage mixture; stir until wel combined. Remove from heat; stir in stock concentrate, crea cheese, and ¼ cup milk (½ cup for 4 servings). Mix until wel combined, then stir in drained pasta. (If needed, stir in reser pasta cooking water a splash at a time until pasta is coated ir creamy sauce.) Taste and season with salt and pepper.

Divide pasta between bowls and serve.
