Stop Rolling Sushi… Just Use an Ice Cube Tray

2 cups Japanese short-grain rice
2 cups water
1/4 cup rice vinegar
2 tbsp sugar
1 tsp salt

Rinse rice until water runs mostly clear
Cook, then let sit covered 10 min
Warm vinegar + sugar + salt until dissolved
Pour over hot rice
Gently mix and cool to room temp
Ingredients
Sushi rice
Smoked salmon
Avocado (sliced)
Cucumber (julienned)
Green onions (chopped)
Fried onions
Garnish
Unagi sauce or teriyaki
Sriracha mayo
Build
Lightly spray tray with avocado oil or neutral oil
Line with plastic wrap
Add salmon + avocado first
Add cucumber
Pack in sushi rice
Press down firm and tight
Flip + Finish
Flip onto a board
Remove tray + plastic wrap
Drizzle sauces
Top with green onions + fried onions

This recipe fills 2 standard ice cube trays
Wet your hands when pressing rice
Tight packs = clean cubes
Add sesame seeds or a tiny wasabi layer inside
