Poppadom chicken

For the chicken -
2x Chicken Breast Fillets 300g
100g Fat Free Natural Yogurt
1x Tbsp Tikka Curry Powder
4x Poppadoms
2x Plain Folded Flatbreads
2x Handfuls, Mixed Leaf Salad
2x Tbsp Mango Chutney
For the mint salad -
1/4x Red Onions, Chopped
5x Cherry Tomatoes, Chopped
Cucumber, Chopped
1x Tsp Mint Sauce

In a bowl, mix the fat-free natural yogurt and tikka curry powder. Coat the chicken fillets in this marinade and let them sit for at least 15 minutes.
Lightly crush the poppadoms into crumbs using a rolling pin. Set aside.
Remove the chicken from the marinade and coat it evenly with the crushed poppadoms.
Place the chicken fillets in the air fryer basket and cook for 15-18 minutes, turning halfway through, until the chicken is fully cooked (internal temperature should reach 165°F).
In a bowl, combine the chopped red onion, cherry tomatoes, cucumber, and mint sauce. Toss everything together until evenly mixed.
Warm the flatbreads in the air fryer for 2-3 minutes, or in the oven, until soft and slightly crispy.
Place a handful of mixed leaf salad on each flatbread. Add the poppadom-coated chicken on top, followed by a generous spoonful of mint salad.
Drizzle 1 Tbsp of mango chutney on each flatbread for a sweet contrast.
Serve the flatbreads immediately, garnished with any remaining mint salad and chutney.
