Blackened Salmon Stuffed with Spinach & Parmesan

4 salmon fillets (skinless, about 6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

2 tablespoons cream cheese, softened

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cayenne pepper

1/2 teaspoon black pepper

1/2 teaspoon salt

2 tablespoons olive oil

1 lemon, sliced for garnish

Fresh parsley, chopped for garnish

Preheat your oven to 375°F (190°C).

In a medium bowl, mix together chopped spinach, Parmesan cheese, cream cheese, and garlic powder until well combined.

Using a sharp knife, cut a pocket into the thickest part of each salmon fillet, being careful not to slice all the way through.

Stuff each salmon fillet with an equal amount of the spinach and cheese mixture, securing the opening with toothpicks if necessary.

Combine paprika, cayenne pepper, black pepper, and salt in a small bowl. Rub this seasoning mixture generously onto both sides of the stuffed salmon fillets.

Heat olive oil in a large ovenproof skillet over medium-high heat.

Sear the salmon for 2-3 minutes on each side until the seasoning is blackened.

Transfer the skillet to the oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.

Garnish with lemon slices and fresh parsley before serving.
