Raspberry Almond Scones

Preheat oven to 220 fan

284g cream flour

65g granulated sugar

2.5 TSP baking powder

100g real butter room temperature

Half tsp salt

Half tsp almond essence

Half tsp vanilla

90ml milk or cream

1 egg

60g full fat greek yogurt

1 bag freeze dried raspberries or 120 g fresh but make sure to flash freeze them for half an hour first.

Some flaked almonds and Demerara sugar for the top.

Mix all the dry ingredients together. Rub in the butter until it resembles breadcrumbs. Add all the wet ingredients and stir with a knife.

Add the raspberries.

Flour the counter and shape into a circle. Don't knead or overmix.

Cut into 8 rectangles and place into a lined tray. Brush the top with milk or cream. Sprinkle over some flakes almonds and coarse sugar. Bake on high for 5 and turn the oven down to 190 for about 12 to 15 mins
