Steak Tacos with Chimichurri

To make the Chimichurri: mix together 1 finely diced shallot, 1 diced red chili pepper, 3–4 diced garlic cloves, ½ cup red wine vinegar, 1 tsp salt, 1 tsp red pepper flakes, ½ cup finely chopped cilantro, ¼ cup finely parsley, 2 Tbsp dried oregano, 3/4 cup extra-virgin olive oil

To make the steak: season your steak of choice (preferably sirloin or skirt steak) with 2 tsp salt, 1/2 tsp black pepper, 1/2 tsp chili powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp dried oregano. Put into a plastic bag and into fridge to marinate for 30 minutes minimum

While marinating, Slice your avocado and grill your flour tortillas (mozzarella cheese skirt optional but recommended 😊)

To prepare steak, place on a cast iron skillet on high heat with some butter and oil for about 5 minutes each side. Allow to rest once done for about 7 minutes and slice!
