600g Chicken Breast Fillets, Diced
1x Tsp Cumin, Ground
1x Tsp Coriander Leaves, Dried
1x Tsp Turmeric, Ground
1x Tsp Curry Powder
1x Red Onion, Sliced
1x Tsp Very Lazy Chopped Garlic
2x Tomatoes, Chopped into quarters
1x Red Pepper, Sliced
1x Green Pepper, Sliced
1x Chilli’s, Diced
500ml Chicken Stock
50g Jalfrezi Spice Paste
1x Tbsp Tomato Puree
200g Easy Cook Long Grain Rice
For the garnish -
100g Fat Free Greek Style Yogurt
20ml Mint Sauce
Coriander Leaves, Fresh

Preheat the oven to 190°C.
Dice the chicken breast into bite sized pieces, then season with the cumin, turmeric, dried coriander and curry powder. Mix well until evenly coated.
Add the chicken to a large ovenproof dish, then scatter over the red onion, garlic, tomatoes, peppers and chilli.
Stir in the Jalfrezi paste, tomato purée and rice. Pour over the chicken stock and mix gently, making sure the rice is fully submerged in the liquid.
Cover the dish tightly with foil and bake for 45 minutes, or until the rice is cooked and the liquid has been absorbed.
Mix the yogurt and mint sauce together, then serve the rice bake topped with fresh coriander and a drizzle of mint yogurt. Enjoy!
