Ground Turkey Stir Fry

Ingredients:
11b (450g) ground turkey
2 tosp oil (olive, canola, or sesame)
3 garlic cloves, minced
1-inch piece of ginger, minced (optional but flavorful)
1 onion, diced
1 bell pepper, sliced
1 zucchini, chopped
1 cup broccoli florets
1 carrot, sliced
2 green onions, chopped (optional garnish)
For the sauce:
3 tbsp soy sauce (or tamari for gluten-free)
1 tosp hoisin sauce or oyster sauce (optional)
1 tbsp rice vinegar or lime juice
1 tsp sesame oil
1-2 tsp sriracha or chili flakes (optional, for heat)
1 tsp honey or brown sugar
2 tsp cornstarch + 2 tbsp water (to thicken)
Instructions:
1. Cook the turkey:
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add ground turkey and cook until browned and cooked through (about 5-7 minutes), breaking it up as it cooks. Remove and set aside.
2. Sauté aromatics:
In the same pan, add another tosp oil. Sauté garlic, ginger, and onion for 1-2 minutes until fragrant.
3. Cook the vegetables:
Add bell pepper, broccoli, zucchini, and carrot. Stir-fry for 5-6 minutes until veggies are tender-crisp.
4. Make and add the sauce:
In a small bowl, whisk all sauce ingredients including the cornstarch slurry. Pour the sauce into the pan with the vegetables. Stir and cook for 1-2 minutes until slightly thickened.
5. Combine and finish:
Return the cooked turkey to the pan. Mix everything well so the sauce coats evenly.
Cook another minute if needed.
6. Serve:
Serve over rice, noodles, or in lettuce wraps.
Garnish with green onions or sesame seeds if desired.
