Parmesan Crusted Chicken Creamy Pasta

44g PRO, 50g CHO, 22g FAT
100g of uncooked chicken breast, butterflied
10g of flour
1 egg, whisked
15g of breadcrumbs
1/2 tsp of garlic powder & paprika
10g of parmesan
Salt/pepper
1 tbsp of olive oil
100g of fresh cooked tagliatelle (save pasta water)
2 cloves of garlic, minced
5-6 cherry tomatoes, sliced in half
1/2 chicken stock cube
20g of garlic & herb cream cheese
Fresh parsley, chilli flakes and 1 tsp of parmesan for garnish (optional)

Butterfly the chicken breast. Mix the breadcrumbs with the parmesan, garlic powder, paprika, salt and pepper. Dip the chicken into the flour, then egg and then the breadcrumb mix. Drizzle over half a tablespoon of oil to the chicken and air fry for 20-25 minutes until cooked.
Boil and cook the pasta and save some pasta water.
Add the other half tablespoon of oil to the pan and the minced garlic. Add the tomatoes and fry for a few minutes. Let them blister and press them down with the spatula.
Add in the cream cheese and crumble in the chicken stock cube. Then add 3-4 tablespoons of the pasta water and let the sauce come to a boil. Reduce the heat to simmer. Add a few more tablespoons of the pasta water if needed.
Then mix in the cooked pasta and season with pepper (Make sure the sauce isn’t runny and has thickened up).
Slice the chicken into strips then serve with the pasta. Sprinkle over some parsley, chilli flakes and parmesan (optional).
