1 tsp garam masala
100ml light coconut milk
600g chicken breast, diced
100g peas (frozen is fine)
1 red pepper, diced
1 tsp ground cumin
½ tsp turmeric
300ml chicken stock
½ tsp chilli powder (optional)
Salt & pepper to taste
1 tsp paprika
1 tbsp olive oil (or spray)
150g 0% fat Greek yoghurt
1 onion, thinly sliced
200g basmati rice (uncooked)

Add everything into a baking dish and mix, bake in the oven at 180 for 1 hour
