Dhaba Style Paneer Masala

3 tbsp oil
250 Gm Paneer (Cubed)
Whole spices
1 bay leaf, 2 cloves, 1 green cardamom, 1 tsp cumin seeds, 1 tsp crushed Coriander seeds, 1 black cardamom)
1 tbsp Crushed Ginger & garlic
1 large onion (finely chopped)
1/2 tsp turmeric powder
1 tsp Kashmiri chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
2 tomatoes (puréed)
1 1/2 cup water
Salt to taste
2 tbsp whisked dahi
To finish
1 tbsp chopped coriander
2 tsp kasuri methi
1/2 tsp garam masala

Heat oil in a kadai and fry the paneer till it gets a golden colour on 2 sides & then remove from the kadai.
Now in the same kadai add in the whole spices & fry for 30 seconds, then add the crushed ginger and garlic and fry for 2-3 mins on medium heat.
Next add the chopped onions along with some salt and sauté till the onions starts to brown, this usually takes 4-5 mins on medium heat.
When the onions brown add the spice powders & cook for 2 mins on low heat & then add in the tomato purée with some water.
Cook this on medium heat for 3-4 min till the oils start to separate & then add the dahi & paneer, mix well and adjust the salt levels, you can also add some water to adjust the consistency, let this simmer for 2-3 mins covered.
Finally finish the dish with coriander, kasuri methi & garam masala, serve hot with rotis & enjoy.
