Mango Chimichurri Steak Fries

Mango Chimichurri:

2 mangos, finely diced (~1 cup)

1/3 cup olive oil

1/4 cup cilantro, chopped

1/4 cup parsley, chopped

3 cloves garlic, minced

1 lemon, juiced

1 tsp oregano

1/2 tsp red pepper flakes

1/2 tsp salt

1/4 tsp black pepper

1 1/2 lbs steak of choice, cooked as desired (I use ribeye)

1 14 oz package fries of choice (I love @jesseandbens bc they are seed oil free!)

First, prepare fries according to package instructions and set aside. Next, prepare the chimichurri. Mix together all of the ingredients for the chimichurri in a small bowl. Taste and adjust as needed. Season the steak on both sides generously with salt and pepper. Heat a cast-iron skillet over medium high heat. Once the pan is extremely hot, add the steak. Do not touch for three minutes, then flip to the other side for another three more minutes. Remove from the heat and let rest for 10 minutes before cutting the steak into cubes. Assemble your plates—fries on the bottom, steak, and mango chimichurri on top. Enjoy! #girldinner #easyrecipes #dinnerideas
