1/3 cup maple syrup

1/3 cup packed coconut sugar

4 teaspoons pure vanilla extract

1/2 teaspoons sea salt

1/2 cups coconut oil, melted

5 cups old fashioned gluten-free rolled oats

2 cups walnuts or pecans, coarsely chopped

1 1/2 cups craisins

1/2 cups dried cherries

1/2 cups shredded coconut

1/2 cups dried apple chips

2 tablespoons ground cinnamon

1. Adjust an oven rack to the upper-middle position and preheat the oven to 325°F. Line a baking sheet with parchment paper.

2. In a large bowl, whisk together the maple syrup, . coconut sugar, vanilla, and salt. Then whisk in the coconut oil. Fold in the oats and chopped nuts until thoroughly coated.

3. Transfer the oat mixture to the lined baking sheet and spread across in an even layer. Using a stiff metal spatula, compress the oat mixture until very compact. Sprinkle lightly with cinnamon.

4. Bake until lightly browned, 30 to 35 minutes, rotating the pan once halfway through baking. Remove the granola from the oven, spoon into a bowl, and stir in the dried fruit. Allow the mixture to cool before breaking the granola into pieces.

5. Store the granola in a glass jar on the counter for up to 1 month.
