Garlic Butter Chicken Spaghetti in Creamy Parmesan Alfredo

12 oz spaghetti
1½ lbs boneless skinless chicken breasts, cut into thick strips
2 tbsp olive oil
4 tbsp unsalted butter, divided
1 tbsp grated Parmesan (for the chicken)
1 tsp Italian herb blend
½ tsp cracked black pepper
½ tsp kosher salt
6 cloves garlic, finely minced
1¾ cups heavy cream
½ cup warm whole milk
1 cup finely grated Parmesan cheese
½ cup shredded mozzarella cheese
¼ tsp white pepper
1 tbsp cornstarch mixed with 1 tbsp milk
2 tbsp reserved pasta water
Fresh parsley, finely chopped

Bring a large pot of salted water to a boil and cook the spaghetti until just tender with a slight bite. Save a couple tablespoons of the pasta water, then drain the spaghetti and set it aside.
Season the chicken strips with salt, cracked black pepper, Italian herbs, and the grated Parmesan. Rub the seasoning into the chicken so it sticks well.
Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken in a single layer and let it cook without moving for a few minutes so it develops a golden crust. Turn and cook the other side until the chicken is fully cooked and nicely browned. Transfer it to a plate and let it rest.
Lower the heat to medium and add the remaining butter to the same skillet. Stir in the minced garlic and cook briefly until fragrant.
Pour in the heavy cream and warm milk, stirring slowly to combine everything. Let the mixture gently simmer for a few minutes until it begins to thicken slightly.
Stir in the cornstarch mixture and continue cooking until the sauce becomes thicker and smooth.
Add the Parmesan and mozzarella a little at a time, stirring constantly until the cheese melts and the sauce becomes creamy and glossy. Season with white pepper.
Add the cooked spaghetti to the skillet along with the reserved pasta water. Toss until the pasta is fully coated in the Alfredo sauce.
Slice the chicken and place it over the spaghetti or mix it gently into the pasta.
Sprinkle chopped parsley on top and serve right away while the sauce is hot and creamy.
