Sweet Chilli Chicken Burger

4x Chicken Breast Fillets

80g Chilli Tortilla Chips

1x Egg, whisked

4x Tbsp Reduced Sugar Sweet Chilli Sauce

1x Tbsp Light Soy Sauce

1x Tbsp Sriracha Sauce

1x Tbsp Runny Honey

2x Spring Onions, sliced

Sesame Seeds, pinch

4x Brioche Burger Buns

1x Little Gem Lettuce

4 x Tbsp Lighter Than Light Mayo

Cover the chicken breast fillets with cling film and flatten with a rolling pin so that all the fillets are of equal thickness.

Measure out the chilli tortilla chips and add to a zip lock bag. Bash with a rolling pin into a fine crumb. Tip the tortilla crumb into a small shallow dish.

To a second shallow dish, crack and whisk one egg. Season with a pinch of salt and pepper.

Each in turn, dip the chicken breast fillets into the whisked egg and then into the tortilla crumb.

Place the coated chicken breast fillets in the air fryer basket. Preheat the air fryer to 180 degrees on the air fryer setting and cook for 20 minutes.

To create the sauce, simply mix the sweet chilli, soy. sriracha and honey in a bowl and set aside.

Once the chicken is cooked and the juices run clear, remove from the air fryer and place on a plate. Use a pastry brush to coat the chicken in the sweet chilli glaze. Sprinkle with chopped spring onion and a pinch of sesame seeds.

Serve in the brioche bun with little gem lettuce and one tablespoon of lighter than light mayo.
