Honey-jalapeño-ginger Marinated Cucumber Salad

For the dressing:

6 tbsp avocado oil

2 jalapeño, finely chopped

4 cloves garlic, thinly sliced

1/3 cup chopped roasted cashews

1/2 cup fresh chopped cilantro

1/2 tbsp fresh grated ginger

1/2 tsp salt

1/4 cup tamari soy sauce

5 tbsp honey

3 tbsp rice vinegar

For the salad:

1 lb Persian cucumbers, quartered then cut into 2 inch pieces

1 tbsp salt

Lime zest

Red pepper flakes

Make the dressing. Heat a sauté pan over medium heat, add the oil, garlic and jalapeño and stir. Cook for about 2 minutes then remove from the heat and set aside.

2️⃣Add the cucumbers and the salt to a bowl and let them sit for 15 minutes.

3️⃣Add the oil with the garlic and jalapeño to a jar, then add the cashews, cilantro, ginger, salt, tamari, honey and rice vinegar. Whisk or shake with a cap to combine.

4️⃣ Drain the cucumbers, rinse, pat dry and place them into a new bowl. Add a few large spoonfuls pf the dressing and toss. Top with more dressing, including the cashews, garlic and jalapeño. Top with red pepper flakes and lime zest.
