I love nachos and this version is not only sooo good but also healthy and super easy to make and clean up:
1 sliced sweet potato
drizzle of olive oil and salt and bake at 375°F for 15-20 mins or till browned and soft (cooked through) or air fried
top off the cooked sweet potatoes with your fave nacho toppings
I added cooked ground beef and shredded cheese, one more time in the oven for the cheese to melt
then red onions, diced tomatoes, diced avocado, cilantro and hot sauce
