Veggie Kebabs

Serves 4 people

2 packs beyound meat

4.5 tbsp lemon juice

1.5 tbsp onion powder

1.5 tbsp garlic powder

1/2 tbsp paprika

1 tbsp oregano

3 tbsp mayo [NOT VEGAN]

4.5 tbsp chopped garlic

1/3 purple onion chopped (and drained)

1/2 tbsp fresh chopped rosemary

Handful of chopped Cilantro (and drained)

Mint (not too much)

Chili oil

1 chopped green chili peppers

1/2 tbsp cumin

1/2 tbsp tandoori spice mix

1/2 tbsp dried thyme

1/2 tbsp dried parsley

1/2 tbsp montreal chicken spice

1/2 tbsp dried basil

Salt and Black pepper (not much salt)

Try to strain the liquid out of some of the ingredients as much as possible (e.g. onions, garlic, cilantro). This will make sure the kebabs don't fall apart an dry out.

Cook on a wire wrack with another tray/pan to catch the drippings underneath. (If cooking in oven and not on BBQ grill).

425F for 10-15 mins on each side.

Note that when its done, it looks like it could cook a bit more. But its good to just take it out sooner. As it cools, it will dry up more. So treat this like baking cookies and take them out a bit sooner for them to be perfectly done and juicy.
