Bourbon Cream Cheesecake

14 ounces Biscoff cookies

2 T white sugar

pinch of salt

1 C butter

4 blocks of cream cheese

1/2 C brown sugar

1 ½ flour

6 oz Bourbon cream (Buffalo Trace)

3 eggs

8oz semi sweet chocolate

1 C milk (warmed)

Cooking spray

Crush Biscoff cookies and thoroughly mix with the white sugar, a pinch of salt and butter.

Spray a 9 inch spring form pan with your choice of cooking oil and firmly press crust mixture into the pan. Place in a 300° oven for 10 minutes.

in a stand mixer mix four blocks of cream cheese, the brown sugar along with 1.5 T of flour. Mix on medium until well combined.

Scrape the side of the bowl, add 4oz of bourbon cream and mix to combine.

Add three eggs, one at a time mixing thoroughly between each one until well Incorporated.

Wrap the bottom of your springform pan in foil and place on a baking sheet. Poor cheesecake mixture into the pan and place in the 300° oven and add water to the baking sheet to prevent burning. Bake for 70 minutes.

After cheesecake is cooked place in the fridge overnight.

For the ganache mixed together, 8 ounces of semi sweet chocolate with one cup of warm milk and mix until smooth. Once well incorporated, mixing 2 ounces of bourbon cream until smooth.

Remove cheesecake from the springform pan and topped with the ganache.

Slice, serve and enjoy!
