Mashed Feta Cucumber Salad

Here’s what you need:

8 mini cucumbers, half diced and half sliced into coins (about 5 cups)

1 shallot, minced

1 avocado, diced

1 can chickpeas, drained and rinsed

2/3 cup pistachios, chopped

1/3 cup dill

5 oz feta

2 tbsp lemon juice

1/3 cup olive oil, plus more to top

Salt and pepper to taste

Prepare the feta dressing. In a small bowl, mash the feta then whisk in the olive oil, lemon juice and a few cracks of fresh black pepper.

Assemble the salad. In a large bowl, add the cucumber, shallot, dill, pistachios and chickpeas. Pour over the feta mixture and toss to combine. Just before serving, add in the avocado to keep from browning. Add a drizzle more of olive oil if it gets too dry. Season with additional salt and pepper to taste and enjoy!
