Mix 1 tsp baking soda (bicarb) with 1 litre hot water.
Add big chunks of tofu and leave it to bathe. The sweet spot can vary depending on your tofu, but we used fresh firm tofu and left it in for 4 hours.
Take the tofu out and pat it dry with some kitchen paper.
You can fry it, bake it or even grill it. We brushed ours with a little oil and popped in our air fryer on the bake setting at 200c for 10mins, flipping half way. You’re looking to seal the outside and get it golden brown.
