Simple Poached Salmon Recipe

Ingredients:
2 salmon fillets (about 6 oz each, skin on or off)
2 cups water (or enough to just cover the fillets)
1/2 cup dry white wine (optional, or substitute with more water
1/2 small onion, sliced
1/2 lemon, sliced
1 bay leaf
A few sprigs fresh dill (or 1/2 tsp dried dill)
5-6 whole black peppercorns
1/2 tsp salt
Instructions:
1. Prepare the poaching liquid:
In a deep skillet or wide saucepan, add the water, wine (if using), onion, lemon slices, bay leaf, dill, peppercorns, and salt.
2. Heat gently:
Bring the liquid to a gentle simmer over medium heat — not a boil. Let it simmer for 5 minutes to infuse the flavors.
3. Add the salmon:
Carefully place the salmon fillets into the poaching liquid, skin side down if the skin is on. The liquid should just barely cover the fish.
Reduce heat to low.
4. Poach gently:
Cover the pan and let the salmon poach for 10-12 minutes, or until the salmon is opaque and flakes easily with a fork. Thicker fillets may need a minute or two longer.
Use a slotted spatula to lift out the salmon.
Serve warm, at room temperature, or chilled - with lemon wedges, fresh herbs, or a light sauce like dill yogurt or mustard vinaigrette.
Optional Sauce: Lemon-Dill Yogurt
Sauce
1/2 cup plain Greek yogurt
1 tsp lemon juice
1 tsp chopped fresh dill (or 1/4 tsp dried)
Salt & pepper to taste
Mix all ingredients in a bowl and chill until serving.

Optional Sauce: Soy-Ginger Drizzle
Mix together:
1 tablespoon soy sauce
1 teaspoon rice vinegar
1/2 teaspoon honey or brown sugar
1/2 teaspoon grated ginger
Dash of sesame oil
Drizzle over the salmon or serve on the side.
