Healthy Cabbage Roll Soup

Zutaten

1/2 tablespoon oil (avocado or olive oil)

450 grams of ground meat (any you like)

1 medium diced onion

2 scallions, chopped

6 minced garlic cloves

2 tablespoons tomato paste

1 tablespoon salt (to taste)

1/2 tablespoon paprika

3/4 cup rice (I used jasmine), washed

4 cups unsalted veg broth (to your desired consistency)

4 cups water

4-5 cups chopped cabbage (1 small head) handful of fresh finely chopped dill

Anweisungen

Big pot on medium-high heat, add the oil. Once the oil shimmers, add the meat. Break it apart, cook until the liquid evaporates. Next, add the onions, scallions, and garlic. Stir for 1-2 min. Add the tomato paste + spices. Stir again. Add the rice + chopped cabbage, stir. Add the broth + water, let it come to a boil and cook on medium-low for 20 min or until the rice has cooked. Take it off the heat, add a big handful of dill. Let it cool, enjoy! Taste and adjust for salt.
