Baked Tortilla Parcels

6 small tortillas
250 g minced beef
1/2 jalapeño
1/2 large shallot
1 garlic clove
Salt and black pepper
1 tsp paprika
1/2 tsp freshly grated nutmeg
1 tsp olive oil
1 bunch coriander
100 g mozzarella
Anweisungen
Preheat the oven to 180 C / 350 F. Line a baking tray with parchment paper.
In a large bowl, combine the minced beef, jalapeño, shallot, garlic, salt, pepper, paprika, nutmeg, olive oil, and chopped coriander. Mix well until fully combined. Divide the mixture into 6 equal portions.
Place one tortilla on a clean work surface. Add one portion of the filling to the centre and gently press it down with the palm of your hand, shaping it into a neat square about 7 cm x 7 cm, roughly 2.75 x 2.75 inches.
Fold the tortilla edges over the filling, overlapping each fold. When you reach the final side, lift the next folded edge slightly and slide the last edge underneath it to lock the parcel in place. Repeat with the remaining tortillas and filling.
Transfer the parcels to the prepared baking tray. Lightly brush the tops with olive oil, then sprinkle over the grated mozzarella. Bake for about 25 minutes, or until cooked through and lightly golden on top. Finish with the reserved coriander and serve warm.
